Phil Devito (1929-2011)
Oregon's Original Sommelier

Phil DeVitoPhil DeVito didn’t grow grapes or make wine. Instead he was one of Oregon’s original sommelier’s who helped grow the acceptance of Oregon wine with fine dining.

Before wine was popular in the 1960’s and 1970’s he offered his customers a glass of wine instead of a cocktail and helped walk them through the wine list. His skills and industry influence grew along with the growth of Oregon’s wine industry. In 1972 DeVito became the Maître d’hôtel and cellar master for the fine dining and wine program at Salishan Lodge on the Oregon coast. Through his hard work and support of Salishan owners John and Betty Gray, in 1988, Salishan was awarded “The Greatest International Wine List in America” at the World of Wine Festival. In addition, his Salishan wine program received Wine Spectator Magazine Grand Award for 12 straight years from 1983-1994 for its high quality wine collection that totaled over 32,000 bottles. No other Oregon establishment before or since has achieved this status, only the lesser “Award of Excellence”.

DeVito retired from Salishan after 22 years. Friends said he would remember each customer and that his sincere hospitality represented a bygone era of elegant ladies and gentlemen who appreciated fine service.
